Ingredients:
For the Spiced Chicken:
- 4 boneless, skinless chicken thighs
- 1 teaspoon turmeric powder
- 1 teaspoon roasted curry powder
- 1 teaspoon mixed spice (a blend of your favorite spices)
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder (adjust to your spice preference)
- 1 teaspoon salt
- 1 tablespoon fresh lime juice
- 2 tablespoons cooking oil (olive oil, canola oil, or your preferred choice)
For the Rice:
- 2 1/2 cups long-grain white rice
- 1 teaspoon salt (for the rice)
- 1 1/2 cups water
For the Aromatics and Garnish:
- 1 onion, finely chopped
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1-inch piece of fresh ginger, minced
- Fresh coriander leaves for garnish
Instructions:
1. Prepare the Spiced Chicken:
- In a bowl, combine the turmeric powder, roasted curry powder, mixed spice, black pepper, chili powder, and 1 teaspoon of salt.
- Rub this spice mixture evenly over the chicken thighs.
- Drizzle the lime juice over the chicken and let it marinate for at least 15 minutes.
2. Cook the Rice:
- Rinse the white rice under cold water until the water runs clear.
- In a large saucepan, combine the rinsed rice, 1 teaspoon of salt, and 1 1/2 cups of water.
- Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed. Keep it warm.
3. Cook the Spiced Chicken:
- In a large skillet or pan, heat 2 tablespoons of cooking oil over medium-high heat.
- Add the marinated chicken thighs and cook for about 5-7 minutes on each side, or until fully cooked and golden brown.
- Remove the chicken from the skillet and set it aside.
4. Sauté the Aromatics:
- In the same skillet, add the remaining 2 tablespoons of cooking oil.
- Add the chopped onion, minced garlic, and minced ginger. Sauté until the onion becomes translucent and aromatic.
- Stir in the diced red bell pepper and cook for a few minutes until it softens.
5. Combine and Serve:
- Return the cooked spiced chicken to the skillet with the sautéed aromatics. Cook together for a few minutes to combine the flavors.
- Serve the spiced chicken mixture over the cooked rice.
- Garnish with fresh coriander leaves.
