Ingredients:
For the Tomato-Garlic Sauce:
- 4 ripe tomatoes
- 1 head of garlic
- Salt and pepper to taste
- 1 teaspoon of sweet paprika or smoked paprika
- Fresh thyme leaves
- 1/2 tablespoon of lemon juice
- 1 small red onion
- Fresh cilantro leaves for garnish
For the Flatbread:
- 1/2 egg
- 50 grams of sour cream
- 1 tablespoon of vegetable oil
- 1 teaspoon of butter
- 1/2 teaspoon of salt
- 1/2 teaspoon of sugar
- 120 grams of all-purpose flour
Instructions:
For the Tomato-Garlic Sauce:
-
Start by preparing the tomato-garlic sauce (chutney).
-
Heat a pan over medium heat.
-
Place the tomatoes in the pan and cook until they become completely soft. If too much juice comes out of them when crushed, allow it to evaporate a bit in the frying pan.
-
While the tomatoes are cooking, peel and finely mince the garlic and dice the red onion.
-
Once the tomatoes are soft, add the minced garlic, diced red onion, sweet paprika, and a pinch of salt and pepper to the pan. Cook for a few more minutes until the flavors meld together.
-
Remove the pan from heat and stir in the fresh thyme leaves and lemon juice. Adjust the seasoning if needed.
-
Transfer the tomato-garlic sauce to a serving bowl and garnish with fresh cilantro leaves.
For the Flatbread:
-
While the sauce is simmering, prepare the flatbread dough.
-
In a mixing bowl, combine the egg, sour cream, vegetable oil, butter, salt, and sugar. Mix well.
-
Gradually add the flour to the wet ingredients, stirring continuously until a dough forms.
-
Knead the dough for about 5 minutes until it becomes smooth. Then, cover it with plastic wrap and let it rest for 20 minutes.
-
Divide the dough into small balls, each weighing about 15 grams.
-
Take one dough ball at a time and roll it out into a thin flat cake on a floured surface.
-
Heat a dry, non-stick frying pan over medium-high heat.
-
Place the rolled-out flatbread in the hot pan and cook on both sides until lightly toasted, about 1-2 minutes per side.
-
As soon as each flatbread is done, transfer it to a clean kitchen towel or a paper towel and place it in a bag to prevent it from drying out.
-
Repeat the process with the remaining dough balls.
Serve the warm flatbread alongside the flavorful tomato-garlic sauce for a delightful and savory snack or appetizer. Enjoy!
